Here’s a bonus recipe for our breakfast quesadillas, as promised. Like a burrito, the Quesadillas is filled with eggs, cheese and your favorite meat. From there, there are endless possibilities. Make it a vegetarian version by adding sautéed red peppers, bell peppers, or onions; or, if you like meat, add it to your quesadillas. Unlike breakfast burritos, it’s a lot easier for kids to eat. Whenever my children try burritos for breakfast, they always have eggs spilling out of their backs, not with them. Everything’s going to stay nice and put. Personally, I like the small crunch of a crisp shell. It just adds a nice dimension that the burrito doesn’t provide for meal.
